Quick (but messy) Quesadillas.

Hello! I am excited to tell you that we've been in the Mighty NZ for 2 months! I can't believe it. Time really does fly when you're having fun. I can't believe how much we've done, that we've got into the swing of van life and how many new experiences we've had already! We're definitely making memories we will never forget but I won't take showers or washing clothes/dishes for granted again! Anyway, these last few days we have continued our travels around the West of Auckland. We have checked out the beautiful Piha beach and climbed up Lion Rock (the eroded neck of a volcano which erupted 16 million years ago), relaxed at KiteKite Waterfalls, walked along Bethells Beach and saw hundreds of gannets at the colony along from Muriwai Beach. We ended up heading back to the colony to watch the sun set which was stunning. We also spent a bit of time in the local hardware store trying to sort our waste tank. That's plumbing skills added to the list! We've also experienced some nice drop toilets filled with bugs, off milk, I've had a guy walk in on me in the toilet and in one day I banged my head 4 times!! Wow that was a sore head. Hey ho, it can't be plain sailing all of the time. Here's a new dinner idea for you. I found some GF corn tortillas in the more expensive supermarket here 'Countdown' and they were $3 for 10. Instantly, I thought of quesadillas. Yum. Here's how to make quick veggie tortilla treats: (Serves 2) Ingredients:


1 tbsp garlic paste


1 onion, finely chopped


2 mushrooms, finely chopped


1/2 red pepper, finely chopped


1/2 can sweetcorn


2 tbsp tomato paste


Spices/herbs - smoked paprika, Cajun and Italian herbs


4 corn tortillas


Couple cubes of cheese

Recipe: 



Heat oil and garlic paste in a saucepan.


Add the onion and mushrooms and simmer for a couple minutes.


Add the rest of the veg along with spices of your choice and the tomato paste.


Meanwhile, heat the wraps in a frying pan, one at a time. Once ready, leave on a plate until you need them.


Once the wraps are heated, heat a little oil in the same frying pan. Place one tortilla in the pan, split the veg on top with a couple cubes of cheese and then place the other tortilla on top.


Cook for 2 minutes and then try to flip the quesadilla over. Leave in pan for 2 more minutes until it starts to crisp a little and the cheese starts to melt. Serve on a plate while you make up the other quesadilla.
