Four Bean Tacos

Yesterday we got up early and made a 5 hour round trip to see NZ's oldest wooden lighthouse built in 1884. The walk was amazing - along a deserted beach past some of the 150 shipwrecks that went down there and some of the petrified kauri. We had the wind behind us on the way and it was cloudy which was nice. It was a last steep walk up to the 85m above sea level lighthouse. Amazing views. We met some of the locals who were out on their motorbike, quads or sand buggys. Some even offered us a lift back! There was less wind and more sun on the way back but we wanted to persevere and complete the walk. A swim in the sea after was the best feeling and it cleaned off the sandy, sunscreen paste that covered us. We chatted with a lot of the locals in the camp that night. A lot of the people staying there come out for a holiday regularly. We hadn't had lunch so we were pretty peckish last night! We wanted to try out the 4 bean mix we had. You could make a tasty chilli with the beans or some tacos like we did. Here's how we made some tasty, but cheap, tacos: (Serves 2) Ingredients:


Spices - smoked paprika, cajun and pepper


1 tbsp garlic paste


1 onion, finely chopped


2 mushrooms, finely chopped


1/3 courgette


1/2 can 'Watties' four bean mix - cannellini, kidney, pinto and lima


'Pams' tacos - 2 each


Couple cubes cheese and few fresh tomatoes on top

Method:


Heat oil, garlic paste, smoked paprika, Cajun spice and black pepper in a pan.


Add the onion, mushroom and courgette.


Simmer, add the beans and cook for 5 minutes.


Once ready, full up those tacos and enjoy a messy meal!

Today, after a lovely swim in the harbour, we headed to Dargaville to get some more veg and we ate lunch and chilled by the Wairoa River. We're heading out to the Kumara (I've just learnt how to pronounce it) Box now. The couple we bought the van off stayed and worked here for 3 months. They loved it. It had great views. We're planning on staying the night and we're going to ask if they need any work now or later in the year. I'm looking forward to trying their Kumara muffins and soup!
