Quick Corn with a Cajun Crumb

Good evening/morning wherever you are! Evening for us. We've just been to the mermaid pools in Matapouri. It's a bit of a clamber up and over a hill but definitely worth it - amazing views of the Pacific and you can swim in the pools spotting crabs, small fish, sea snails and starfish.

Here's a very cheap, healthy meal which is one of our favourites.

We hadn't cooked corn on the cob in a frying pan before but seeing as we only have a frying pan and a saucepan we wanted to give it a go. Also, we met a lovely couple in Matapouri who had used a bbq at their previous camp to cook up some corn. That encouraged us even more to give it a go. Some paid camps even have outdoor bbqs you can use!

As I've mentioned before, at the moment, corn is very cheap. We can buy 5 cobs for $3 which makes for some cheap and tasty dinners. You could serve it one it's own or serve with tacos. Yum. Here's how to turn them into a Cajun delight.

Ingredients 


2 cobs


1 tbsp butter


2 tsp garlic paste


Spices of choice - we use smoked paprika, black pepper, Italian herbs and mixed cajun

Recipe 


  1. Heat the oil, garlic and herbs.

  2. Add the corn. Regularly turn and cook until ready. This usually takes us 7 minutes.

  3. When serving make sure you use the herby crumb left in the pan - coat the corn and they're ready to eat.

Yum, yum, yum. 

All you need for a summer evening. We have revisited Tutukaka. Two nights a go we stayed at Wooleys Bay and spent the morning swimming and chatting to an Italian fella we met. We then went for a windy walk from Whale Bay to Matapouri Bay and back. We wanted to try swimming in the mermaid pools that day but the waves were crazy. We ended up enjoying some lunch in Tutukaka and then staying along at Wellington's Bay last night. A beautiful, quiet beach. We chatted to our neighbours in the free camp and enjoyed our corn on the cob for dinner. Tonight we're staying next to the local library in Nguruguru eating up the last of the pitta pizzas!
