A Mex-cellent Feast.

Let's taco about Mexican food! Sorry there are so many good mexican puns!

Oh man I would love to go to Mexico one day. I love Mexican food - give me a burrito, quesadilla, taco, fajita, chilli or nachos anyday. One of the best burrito places in Edinburgh is 'Los Cardos' on Leith Walk. They have lots of veggie options, you can choose which mexican beans you want and they have burrito bowls too! Mmm. Once I tried their veggie haggis burrito (I wasn't sure what to expect) and oh my, it was out-of-this-world. Edinburgh is pretty spoilt for Mexican restaurants. In my opinion, some of the best are Viva Mexico on Cockburn Street, Miro's Cantina on Rose Street, El Cartel on Thistle Street, Topolabamba on Lothian Road, Las Iguanas on George Street and The Basement on Broughton Street. You'll always tend to find veggie options and wraps and tacos should be GF too - just check though!

On last nights menu Scott and I 'teamed' dinner and served up spicy chipotle quorn pieces, fajita style roast veg, mexican rice, wraps, salsa, guacamole, soured cream and plenty grated cheese. It is a quick weekday meal with 3 main steps which are easy to put together, even with all of the components! Yum!

Ingredients:

(Serves 6)

  • Seasoning - cumin, smoked paprika, hot paprika and cinnamon.

  • Marinade for the quorn - use above seasoning + tomato puree, honey, chipotle paste, a splash of oil and water, and fresh chili.

  • 1 courgette, sliced into strips

  • 250g mushrooms, sliced

  • 2 garlic cloves, chopped

  • 2 red pointed peppers, sliced into strips

  • 150g snack peppers, sliced into strips

  • 1 red onion, sliced into petals

  • 300g quorn pieces

  • 500g mexican rice (for ease - we used the microwave rice that can go in oven too)

  • GF wraps (the BFree Sweet Potato wraps are tasty)

  • Optional extras - guacamole, sweetcorn relish, creme fraiche, salsa and fresh tomatoes, salad leaves and cucumber

Method:

1. In a tub, marinade the quorn pieces in the seasoning mentioned and leave for as long as possible in the fridge. The quorn pieces soak in the flavours really nicely.

2. Place chopped veg in a roasting pan and sprinkle over seasoning. Stick in the oven for 45 minutes to take in the flavours.

3. Once the veg is nearly ready, heat oil in a frying pan. Cook marinated quorn pieces until the sauce has reduced a little.

4. Heat up the mexican rice in a little water and serve up the wraps (warmed slightly if you want), quorn, veg and whichever extras you wish.

Then you can make up you your fajitas in any way you like - perfect!

I hope you've had a good week. We had a sprinkle of snow yesterday. I felt like a child when I woke up and saw the snow outside.
