You sure are a 'sweet' potato soup

Hey! Here's a new soup idea for you to warm you up! I don't know about you but I loooove sweet potatoes. You can use them in so many ways - wedges, hasselback style, baked, in curries, and they are perfect for soups. Here's a simple but quick soup that only requires three main ingredients:
Ingredients:
Olive oil
2 large sweet potatoes, cut into similar sized chunks.
2 red pointed peppers, roughly chopped
2 red onions, roughly chopped
2 garlic cloves
2 tsps cumin, smoked paprika and oregano
1L vegetable stock
Seasoning to taste
Method:
Put the sweet potoatoes, onions, red pepper and garlic coated with spices/seasoning into an oven proof dish and pour over the olive oil.
Roast in the oven at 180°C for about 45 minutes until all the ingredients are soft.
Put the cooked vegetables into a blender and add the hot vegetable stock. Blend to a liquid and serve. Add more vegetable stock if you require a thinner consistency.
I did find that the soup was pretty thick and the onion was a nightmare to blend - be patient and keep blending ha! I ended up adding extra hot water with the remnants of stock until I was happy with the soup. There were still a few small bits of veg left in the soup but nevermind - surprise!
Anyway, Quick, easy, Soup = Done.
It's a good soup that is hearty and can easily be served up for dinner - it's that hearty! It is really tasty, I promise!
