Chop Chop

Very mushroom-y noodles with a cashew nut stir fry. Served with rice noodles and sesame coated quorn 'chicken' pieces. 

This blog is called 'chop chop' because it requires a fair bit of chopping and it's a very quick meal! How does that sound for a weekday meal? 

Ingredients:

(Serves 4-6)

  • 250g porcini mushrooms, roughly chopped

  • 150g chestnut mushrooms, roughly chopped

  • 100g baby button mushrooms, roughly chopped 

  • 1 courgette, roughly diced

  • 2 shallots, sliced

  • 1 pointed red pepper, roughly diced

  • 2 garlic cloves, sliced

  • 1/3 green chilli, deseeded and finely chopped

  • 2 tbsp sesame oil

  • 100g cashew nuts

  • 1 tbsp soy sauce (check it's GF)

  • 300g quorn pieces

  • Marinade - cumin, smoked paprika, cayenne pepper, five spice, garlic and rice wine vinegar, sesame oil, jalapeno paste, soy sauce, tomato puree, honey and seasoning 

  • 30g sesame seeds

  • Ribbon rice noodles - I used 3 x 150g packs

Method:

1. Marinade quorn pieces with the ingredients listed above. Create to your own liking, put the lid on and shake. Marinade for as long as you like - the flavour will develop the longer you leave the pieces.

2. Prepare the mushrooms, courgette, shallots, pepper, garlic and chilli.

3. Place the sesame seeds in a frying pan and toast lightly over the hob. Once ready, take off the heat.

4. 2 hob multitasking time:

- Heat sesame oil over a medium heat in a wok. Add the shallots, garlic, chilli, smoked paprika and cayenne pepper and allow them to cook for 2 minutes. Then add the mushrooms, courgettes, peppers and cashew nuts. Leave them to stir-fry for another 2-3 minutes. Finish by adding the soy sauce. Cook for a final 2-3 minutes. Once nearly ready, add the rice noodles and cook for 2 more minutes.

- At the same time, fry the quorn pieces on the hob. Once nearly ready, sprinkle the toasted sesame seeds on top.

5. Serve.

Honestly, it's a very quick meal and I liked how much the mushroom stood out in this dish. The noodles were quite light which complimented the sesame quorn. Perfect!

Sorry it's been quieter on the blog front. Scott and I have been busyyy. We have now booked an air bnb for when we get to Auckland, and we have bought a few last things, travel pillow for example. We have also sorted out our backpacker mail service. For quite a lot of things, e.g. buying a camper and arranging a NZ bank account, you need a permanent postal address within NZ. There is a Mail Service for only $54.99 that gives you your own permanent address in NZ where you can get all your mail sent to and register everything you need. When you want your mail you can either pop into the NZ office in Auckland or ring up and they forward it onto you wherever you are in NZ - at no extra charge! How good is that!?

Anyway, I hope you're having a good week! My next soup is going to involve roasted sweet potato I think. Watch this space...
