I'm feeling generous today. If you've already read my 'Sweet Onion with Corn Bread' blog and fancy having a go, here's that tasty dip that you might want to serve on the side. I have been meaning to make a dip like this for ages so I've finally made it:
Ingredients:
435g refried black beans
140g block cream cheese (I used light philadelphia)
Juice of 1/2 lime
1 packet taco seasoning or make your own - cumin, smoked paprika and cinnamon
300g jar salsa
200g grated cheese (I used Mexican nacho cheese)
1 jalapeño, sliced
GF Tortilla Chips
Method:
1. Preheat oven to 170°C.
2. Add refried beans, cream cheese and lime juice to a microwave safe bowl. Heat for 45 seconds or until warm enough to stir together. Or spread into oven dish and pop in oven for 5 minutes.
3. Add taco seasoning to the bowl and mix.
4. Spread bean mixture into an 8x8 or 9x9 baking dish then top with salsa, grated cheese and jalapeño slices.
5. Bake for 25 minutes. Let cool slightly, and serve with tortilla
chips.
The perfect accompaniment. Don't say I'm not good to you. This dip went down very well and I think I'd make this again if I was making a mexican-style feast.
I also made some roasted red pepper and tomato soup. I'll share that recipe soon. I was in a cooking mood tonight!
