Souper Soup

Oh aye I do love Soup Season - I'm so glad it's begun! Last year I really got into making soup and my two favourites were 'Tuscan Bean' which I will make soon and this soup - Courgette, Potato, Basil and Cheddar.
My mum told me that her friend brought her a bowl of this soup when she was really ill and she swore it helped her to feel better. It must have healing powers! My mum has made me this soup a lot and I just looove it. We sometimes have it as a starter at Christmas or for dinner parties. It has become quite popular now, this soup. Last year, I let some of my work colleagues try it and now they make it regularly. We'd always compare on our lunch breaks - it almost became a competition of whose courgette soup was best. Now, my boyfriend, Scott, likes courgettes but he didn't think he'd like green soup. However, even he LOVES it and now it is one of his favourites. It's such a heartwarming soup that is creamy yet fresh. It is a really easy soup to make and pretty much foolproof. If this soup takes your fancy here's how I made it:
Ingredients:
Olive oil
1 onion, chopped
3 large courgettes, chopped into slices
3 cloves garlic, chopped
1L vegetable stock
1 large potato, peeled and chopped
60g basil, roughly torn
200g extra mature Cheddar or vintage cheddar, cut into cubes
Seasoning, to taste
Method:
1. Heat the oil and onion in a heavy-based pan over a medium heat.
2. Add the courgettes and garlic and cook for 10 minutes, or until the courgettes are lightly browned and softened.
3. Add the vegetable stock, potato and basil. Make sure the veg is covered with the liquid. Season.
4. Bring to the boil then lower the heat and simmer for 45 minutes with a lid partially on.
5. After 45 minutes, take lid off and leave to cool.
6. Once cooled, start blitzing using a hand blender, adding cheese a little at a time to your taste. I like it cheesy.
7. Enjoy! Served with GF cheese scones is my favourite accompaniment.
I made this on Thursday and we served it up last night with some nibbles - fresh bread, cheeses, chutneys and salads. I've mentioned before that we like a 'nibble' dinner on a Friday, using leftovers and whatever is in the fridge and cupboards. The soup was a perfect addition - nothing like a warm bowl of goodness on a cold night.
