Bake Off Part 6: Apple and Raisin Flapjacks

Just in time for The Great British Bake Off tonight, here's another treat for you. Last night I made my first ever batch of flapjacks. They were easy to make and very yummy to taste. By the way, I wasn't implying that my bakes are GBBO worthy...yet!
I always feel like I am making a healthier choice if I choose a flapjack over a slice of chocolate cake when I'm out for coffee (I just ignore how much sugar is in them because they feel and taste like they are the healthier option). Also, my better half, Scott, always picked the flapjack as his snack whenever he bought a Boots £2.99 'Meal Deal', alongside his choice of sandwich and drink. That's a little flapjack background for you, and that is why I thought I would try to make my very own flapjacks so I knew exactly what was in them. I looked at numerous recipes, decided what I wanted to use for my version and here's what I did:
(Serves 16)
Ingredients:
* 250g rolled oats (gluten free)
* 150g butter
* 60g brown sugar
* 3 tbsp golden syrup
* 1 apple (peeled and grated)
* 100g raisins
* 2 teaspoons cinnamon
Method:
1. Preheat oven to 160°C. Grease and line a 20cm square tin with baking parchment.
2. Heat the butter, sugar and syrup until melted.
3. Add the grated apple and 50ml hot water, mix.
4. In a separate bowl, tip in the oats and raisins. Mix and add in the cinnamon.
5. Pour the butter mix into the dry mix and stir until everything is coated.
6. Tip into the cake tin and level the surface with the back of a spoon.
7. Bake for 55 minutes, or until golden (I baked it in the bottom left aga for 55 mins).
8. Leave to cool in the tin. Cut into 12 pieces to serve or store in an airtight container in the fridge.
9. Enjoy!
When I took the tray out of the oven the top was golden, but I wasn't sure if they were too crumbly/dry. I don't think I used the full 150g of butter so I would make sure I did next time. Also, next time I would try using 2 or 3 apples. Some slices got a taste of the apple coming through, but not all. Apart from that, they turned out very well. I refrigerated them overnight and they taste even better today! They aren't too sweet which is good and wait for it...Scott ate a slice today...and...he said...'They are the BEST I've had'. I will take that, and now it is written down. Thanks Scott.
