Lasagna Beuy!

Today's blog is alll about me being a tourist around Orkney and making yummy gluten free veggie lasagna. P.s. beuy is orkney slang - not really 100% what it means but you can say it like 'What a nice day beuy!'.

Yesterday I had a treasured day off yay! I became an Orkney tourist for the day - and what a beauty of a day it was beuy! After a small lie in, I ventured out to a few special places. First stop was Skara Brae (built long before Stonehenge or the Egyptian pyramids and you can see original fitted furniture). A two minute walk from the site takes you to Skaill House (a historic manor house which overlooks Skara Brae and the Bay of Skaill). I have visited both of these places before but I always like to go back (you've got to make the most of a Historic Scotland card eh?!).

It's great going somewhere for the first time isn't it? Well, yesterday I visited the Skaill Falconry for the first time. It was such a great experience and I would definitely recommend going! I got to meet/stroke a barn owl (Peedie) and a boobook owl (Skara), and I watched a Harris Hawk (Derek) flying display. After the display, I relaxed in the sun chatting to the Falconry team and Derek (that's right - I was chilling with a Harris Hawk).

Before it was time to head back to cook, I just had to make a quick stop to see one of my favourite spots in Orkney - Yesnaby. If you like seeing rugged cliffs and sea stacks then this is a must see (I feel like I'm a Visit Orkney representative but there are just so many beautiful spots to see!).

Now, in a previous post I mentioned something creamy and courgette-y. I have tried and tasted two lasagnas before - spinach and ricotta, and roasted veg. This BBC Good Food recipe caught my eye though:

I followed the recipe, using gluten free lasagna sheets and using passata with tomato puree and Italian herbs for the tomato sauce. If you're looking for a lighter dish this is perfect. I think, however, it could have been creamier. Next time, I would use more ricotta than it suggests (I had only bought one tub).

To complete a perfect day, it was a fairly clear night here so there was only one thing to do: choose somewhere to go and watch the sunset. Check out my snaps from the Standing Stones of Stenness (and a few others from my day of history and lasagna):
