Bake Off Part 3: B's Bounty Bars

Last night = a coconut, chocolate covered messy kitchen!

Totally worth it though. I looked at a few different recipes for making homemade bounty bars. Some recipes suggested using coconut oil, coconut milk and maple syrup with the coconut. I think I'll try making them again using a different variation of ingredients, but last night I ended up using just 4 ingredients - desiccated coconut, icing sugar, condensed milk and chocolate. Easy!

They have turned out so well (if I don't say so myself). Surprisingly, they aren't too sweet, they were easy and quick to make, and they save some money (seeing as Bounty bars are usually 80p(ish)).

Sound good? Here's what I did to make my bountiful, brilliant, bounty bars.

Ingredients:

  • 3 cups dessicated coconut

  • 2/3 cup sweetened condensed milk

  • 1/2 cup icing sugar (I used it but don't know if it's actually needed)

  • 250g chocolate (I used 125g milk and 125g dark so I have 7 milk choc bars and 7 dark choc bars)

Method:

  1. Mix together the coconut, condensed milk, and icing sugar in a large bowl. Mixture should come together, but still be sticky.

  2. Form mixture into rounded rectangles, about 2 inches in length. Wet your hands for easier handling!

  3. Refrigerate for about 1 hour.

  4. After bars have chilled, take out of the refrigerator. Melt the chocolate in a glass bowl. Chocolate should be smooth and glossy.

  5. Dip each bar into the chocolate until completely covered. Place on wire rack or parchment paper to harden. Refrigerate about 30 minutes. Time to eat!

There you have it! How easy is that?

It's fun to play around with ingredients so feel free to use this recipe as a rough guide and add your own twist.
