Oh my veggie!

Evening! I hope you are having a lovely weekend. Mine has mainly consisted of walking, eating gluten free veggie goodness, drinking bubbles, playing Rummikub (if you haven't heard of it/played it then you are missing out, have a look - https://en.wikipedia.org/wiki/Rummikub), listening to music and a visit to the Vintage Tractor and Car Rally in Kirkwall.

To finish off a lovely weekend, I knew exactly what I wanted to make for tonight's dinner. Pasta + roast veg + pesto = simple, yet a veryyyyyy tasty meal. This has to be one of my favourite go-to dishes.

If this sounds like something you'd like to see on your plate all you have to do is:

1. Roast some veg of your choice (I went for tomatoes, peppers, aubergine and courgette) in a little oil and basil.

2. Whip up some homemade pesto (I was a pesto-making virgin until this evening but I actually made pesto wooohooo). Some recipes suggest using a mortar and pestle but this recipe from BBC Good Food worked wonderfully:

Ingredients:

  • 50g pine nuts

  • 80g basil

  • 50g parmesan

  • 150ml olive oil

  • 2 garlic cloves

Method:

Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally. Put into a food processor with the basil, Parmesan, olive oil and garlic cloves. Process until smooth and season.

3. Cook some gluten free pasta and there you have it - a veggie gluten free feast!

I have added some photos from today's festivities including a very fruity brekkie, my walk this morning, the Rally, our delicious dinner and a beautiful evening sky. P.s one of my favourite walks in Orkney is a short climb to the top of Wideford Hill. It has a great viewpoint above Kirkwall and you can visit the impressive chambered cairn on the far side of the hill.
