Tasty GF crispbreads...even liked by those glutenous folk!

When I first found out that I needed to stop eating gluten, trying to find tasty GF products was tricky but, even in the last year, GF food has become much more readily available and it tends to be a lot tastier now (even if you have to renew your mortgage to be able to afford it - I'm hoping the price will drop soon as it is ridiculous how much more expensive it can be!).
If you love carbs as much as I do, trying to find gluten free alternatives for lunch was important. Luckily I found the Schar Gluten Free Crispbreads - yay! They aren't too pricey, they are under 30 calories per slice yet they still feel like a substantial snack, AND they are so versatile.
They are ideal for a quick bite and there are so many topping variations you can create. My favourites are:
- hummus, spinach and tomato
- mature cheddar and chutney
- avocado and tomato
- roast veg and hummus
- garlic aioli, roasted aubergine and tomato
- mozzarella, tomato and pesto
- avocado, red onion and tomato
- crumbled feta cheese, red onion, red pepper and basil
- chocolate spread and strawberry
- peanut butter and banana
- cream cheese, kiwi, walnut and honey
(mmmmmm...yes?)
They also go perfectly with my favourite soup - courgette, basil and mature cheddar. I will share my recipe soon when it gets into soup season again.
Below is a photo of my quick lunch today - schar crispbreads with red pepper hummus/mature cheddar and peanut butter/banana. I also had a play with my new cutters - the hearts are made from mature cheddar and peanut butter (not together!). I'm thinking the cutters will be perfect for making tasty (and pretty) fruit salads!
