Do you like peanut butter?

Ingredients:

  • 250g peanut butter

  • 60g honey (or brown rice syrup for a vegan version)

  • 2 teaspoons vanilla extract

  • 135g rolled oats

  • 40g desiccated coconut

  • 60g milk or dark chocolate chips

  • 2-4 teaspoons water or additional vanilla extract

Method:

  1. In a medium mixing bowl, stir together the peanut butter, honey and vanilla extract.

  2. Stir in the oats and coconut until well combined and then add the chocolate chips. If the mixture doesn’t hold together well when pinched together, add the additional water or vanilla, a teaspoon at a time until the mixture holds together well when pinched.

  3. Form 1” balls by pressing about 1 tablespoon of the mixture together.

  4. Store at room temperature for up to 3 days or refrigerate for 1 week.

They are quick and easy to make (it took me 5 minutes tonight). They are quite sweet but you can adapt the recipe to suit your tastes.

I am already looking forward to having one tomorrow after the gym (although you don't need to go to the gym before you eat one)!
